Curried Purple Carrot Soup - Halloween Special
This Purple Carrot Curry Soup recipe uses the Great Northern Spice Dhansak Curry Blend, making it a perfect addition to your Halloween feast.
Ingredients
Half a tablespoon Great Northern Spice Dhansak Curry Blend
2 large purple carrots, chunked
1 large white potato, chunked
1 medium brown onion, quartered
1 clove garlic, or 1 teaspoon chopped garlic
Kallo Organic Vegetable stock cube (also vegan friendly)
How to Cook - Ninja Soup Maker
Add your quartered onion and teaspoon of garlic to the Ninja Soup Maker. Press the CHOP function. Once complete, press the SAUTE function.
Add your roughly chopped carrots and potatoes, then the Dhansak Curry Blend. Toss in the stock cube and pour in cold water up to the MAX COLD line.
Press the SMOOTH soup function and let it cook for 30 minutes.
Pour out and enjoy!
Tips for Serving
Serve with sourdough bread. Add a little cream (or plant-based cream) on top to make it extra spooky!
