I followed the website's recipe, making a few tweaks like marinating the chicken in yogurt, garlic, ginger, and Sri Lankan spice mix, and simmering it longer to reduce the sauce and tenderise the chicken as it was thigh meat. It was really lovely, but even better the next day. I loved the simplicity of using the spice mix instead of individual spices. Having made this dish many times, I can confidently say this was the best. I'm using the Peruvian rub next. :)
