Biryani is a classic South Asian rice dish known for its rich layers of fragrant basmati rice, aromatic spices, and meat. With roots tracing back to the Mughal era, biryani blends Persian and Indian culinary traditions into a one-pot dish.

INGREDIENTS

  • 2 tablespoons of Great Northern Spice Biryani Rice Seasoning

  • 4 boneless chicken thighs

  • 1.5 tablespoons natural yoghurt

  • 2 tablespoons of olive oil

  • 1 teaspoon minced garlic or garlic purée

  • 1 teaspoon minced ginger or ginger purée

  • 2 white/brown onions, thinly sliced

  • Half a tin (200g) of chopped tomatoes

  • 1 tablespoon tomato purée

  • 2 green chillies, chopped (optional)

  • 2 packets of microwave basmati or wholegrain rice


VEGETARIAN / VEGAN OPTION

  • Sweet potato or butternut squash, cut in to large chunks

  • 1 aubergine, cut in to chunks

  • 1.5 tablespoons plant based yoghurt


HOW TO COOK

  1. Marinate the chicken (or vegetables) in yoghurt and 2 teaspoons of the Biryani Seasoning. Set aside and marinate for 20 minutes or overnight if possible.

  2. In a large pot, add the onions, garlic and ginger and fry for 5 minutes until sautéed, stirring occasionally.

  3. Add the chopped tomatoes and fry stirring well for 3 minutes, before adding the tomato purée and the optional chillies. Fry for a further minute.

  4. Add the marinated chicken thighs (or vegetables) and the remaining Biryani Seasoning. Stir in and cook for 20 minutes, stirring occasionally. If it gets too thick, just add 50ml of water.

  5. Warm 2 packets of rice in the microwave for 4 minutes before adding to the pan. Stir in well to ensure the flavour covers the rice. Cook for a further 3-5 minutes until your chicken is cooked right through, or vegetables are soft to cut.

  6. Serve in a big bowl and enjoy!
