Chicken Shawarma Flatbreads

We've teamed up with home cook and fellow Northerner @EatCookFoodie on Instagram to bring you a fantastic Shawarma chicken flatbreads recipe. It's crafted for the BBQ and perfect for Spring and Summer outdoor cooking.




This Chicken Shawarma Flatbreads recipe uses the Great Northern Spice Shawarma Rub & Seasoning.

INGREDIENTS

FOR THE MINT SAUCE

  • 1 cup yogurt

  • 1 tablespoon lemon juice

  • 1 teaspoon garlic, minced

  • 2 teaspoons of dried mint

  • 2 tablespoons of fresh mint, finely chopped

  • Salt and pepper (to taste)


HOW TO COOK - BBQ Method

  1. In a large bowl, add the chicken thighs. Mix in the yogurt, lemon juice, olive oil, and 4 tablespoons of the Shawarma Rub & Seasoning. Coat the chicken well. Let it marinate for at least 2 hours. For the best results, marinate overnight.

  2. Fire up the BBQ! Set up your Weber MasterTouch with Globaltic Lumpwood Charcoal for direct grilling. Heat the grill to medium-high.

  3. Cook the marinated chicken over direct heat for around 10-12 minutes. Turn the chicken frequently to ensure even cooking and a nice char. Check for an internal temperature of 75°C (165°F). Once done, let it rest for a few minutes before slicing it into pieces.

  4. With a few minutes left on the chicken, it's time to prepare the flatbreads. Lightly toast them on the grill for about 30 seconds per side. This helps to enhance their flavour.

  5. Load each warm flatbread with the sliced shawarma chicken. Drizzle generously with the mint sauce. Garnish with fresh coriander for a pop of color and flavor.
