Bruschetta with Mediterranean Herbs Recipe

Creamy avocados are mashed and combined with finely diced red onion, tomatoes, and seasoned with Great Northern Spice Coconut & Lime Sea Salt for a fresh twist. For dipping and sharing with chips, tacos, or grilled dishes.

INGREDIENTS

  • 2 teaspoons of Great Northern Spice Coconut & Lime Sea Salt

  • 3 large ripe avocados, stone removed

  • 2 vine tomatoes, deseeded and finely diced

  • 1 large red onion, finely diced

  • 1-2 tablespoons natural yoghurt (depending on how creamy you want it)

  • 2 tbsp fresh coriander, finely chopped (optional but recommended)

  • 1 fresh red chilli, finely diced (optional, for extra heat)

  • Freshly cracked black pepper, to taste


HOW TO PREPARE

  1. Halve the avocados, remove the stones, and scoop the flesh into a large mixing bowl. Using a fork, mash the avocado until creamy but still slightly chunky for texture.

  2. Fold in the natural yoghurt, finely diced red onion, vine tomatoes, and coriander if using.

  3. Add the Coconut & Lime Sea Salt. Mix gently to combine. For an extra kick, stir through the finely diced fresh chilli.

  4. Adjust seasoning with extra sea salt, or black pepper until the balance is bright, creamy, and fresh.


WHEN TO ENJOY

Serve immediately with tortilla chips, warm flatbreads, tacos, grilled chicken, or as part of a sharing platter.


IF STORING IN THE FRIDGE

Press cling film directly onto the surface of the guacamole if making ahead—this helps keep it vibrant and green.
