Mexican Chicken Bake Recipe
Veggie & vegan option: cauliflower, tofu or chunks of sweet potato.
This Mexican Chicken Bake recipe uses the Great Northern Spice Mexican Fiesta Seasoning.
Ingredients
2 tablespoon of Great Northern Spice Mexican Fiesta Seasoning
4 chicken thighs (boneless & skinless) or your vegan/veggie option
1 tablespoon of olive oil
1 medium red onion, finely chopped
500g passata
Handful of grated cheese (Cheddar, Monterey Jack or vegan cheese)
How to cook - 3 easy steps
Preheat your oven to 180°C. In a large bowl, mix the chicken with olive oil and 1.5 tablespoons of the Mexican Fiesta Seasoning. In a separate bowl or jug, add passata and stir in the other half tablespoon of Mexican Fiesta Seasoning.
In a non-stick ovenproof dish, add the onion, red pepper and lay the chicken over the top. Cover with passata and place in the oven for 20-25 minutes.
Half way through, add the grated cheese over the chicken and cook for the remaining time.
Tips for serving
Slice and add to tortilla wraps, or serve with wholegrain rice. For a low carb option, serve on top of a salad bowl.
