If you're looking to add some bold, mouthwatering flavour to your dinner routine, this Mexican Chicken Bake is just what you need. Packed with smoky spices from our Mexican Fiesta Seasoning and a hint of heat, this dish captures the vibrant essence of Mexico in every bite.



This Mexican Chicken Traybake recipe uses the Great Northern Spice Mexican Fiesta Seasoning.

INGREDIENTS

  • 2 tablespoon of Great Northern Spice Mexican Fiesta Seasoning

  • 4 chicken thighs (boneless & skinless)

  • 1 tablespoon of olive oil

  • 1 medium red onion, finely chopped

  • 500g passata

  • Handful of grated cheese (Cheddar or Monterey Jack)


HOW TO COOK - Traybake Method

  1. Preheat your oven to 180°C. In a large bowl, mix the chicken with olive oil and 1.5 tablespoons of the Mexican Fiesta Seasoning.

  2. In a separate bowl or jug, add the passata and stir in the other half a tablespoon of Mexican Fiesta Seasoning.

  3. In a non-stick ovenproof dish, add the onion, red pepper and lay the chicken on top. Cover with passata and place in the oven for 20-25 minutes.

  4. Half way through, add the grated cheese over the chicken and cook for the remaining time until golden and the chicken is cooked right through.


TOP TIP

Slice and add to tortilla wraps, or serve with wholegrain rice. For a low carb option, serve on top of a salad bowl.
