A fusion of Louisiana Southern flavours and Italian cuisine, this creamy cajun pasta uses our Louisiana Red Cajun Seasoning, and makes for an easy and healthy mid-week family meal. This is one of our favourites!

INGREDIENTS


HOW TO COOK

  1. Heat the oil in a large pan on a medium-high heat.

  2. Add the diced chicken to a bowl with 1 tablespoon of olive oil. Sprinkle over a tablespoon of our Cajun Seasoning and mix together.

  3. Pan-fry the chicken and pancetta until cooked throughout for about 15 minutes.

  4. Add an extra tablespoon of our Cajun Seasoning, along with the tomato purée and stir in. Add the diced red pepper, mushrooms and cook for 10 minutes.

  5. Pour in the chicken stock and double cream, reduce to a low heat and simmer until it thickens for about 5-10 mins.

  6. Meanwhile, in a pan of boiling water, add 1 teaspoon of salt and start cooking your pasta according to the packet instructions until al dente.

  7. Add the spinach and wilt down, along with the grated parmesan.

  8. Drain the pasta, then add to the pan of sauce. Stir to coat the pasta evenly.

  9. Serve in a bowl, grate over a little bit more parmesan, drizzle with our Mediterranean Olive Oil and enjoy.
