Peruvian Salmon with Sauteed Potatoes

INGREDIENTS

  • 3 teaspoons of Great Northern Spice Peruvian Seasoning

  • 2 x 125g salmon fillets

  • 2 tablespoons olive oil

  • 1 red pepper, diced into small chunks

  • 1 red onion, finely diced

  • 2 large potatoes (Maris Piper), cubed


HOW TO COOK

  1. On a large plate, rub 1 teaspoon (per salmon) of the Peruvian Seasoning all over the salmon and splash with oil. Ensure the seasoning is fairly even over the fish.

  2. In a microwavable bowl, add the cubed potatoes and microwave for 5 minutes to soften.

  3. In a frying pan on a medium heat, add the salmon skin side down, and - depending on the size of your salmon fillet - fry for 4 mins. Gently turn over and fry for a further 4 minutes.

  4. Transfer the salmon to a non-stick baking tray and place into a preheated oven at 180℃. Cook for 8-10 minutes - depending on the size of your salmon fillet.

  5. In the meantime, add the potatoes, onion, pepper, and a splash of olive oil to a separate frying pan and sprinkle over 1 teaspoon of the Peruvian seasoning. Stir in, and fry on a medium heat for 15 minutes, stirring occasionally.

  6. Serve the salmon and potatoes mixed with onion and peppers with a side salad and enjoy!
