Harissa & Rose chicken and sweet potato traybake is a delicious and flavourful dish that uses our aromatic Harissa & Rose Seasoning. This Middle Eastern-inspired traybake recipe is so easy to make.



This Harissa & Rose Traybake recipe uses the Great Northern Spice Harissa & Rose Seasoning.

INGREDIENTS

  • 2 tablespoons of Great Northern Spice Harissa & Rose Seasoning

  • 4 large boneless and skinless chicken thighs, whole

  • 1 tablespoon olive oil

  • 1 red onion, sliced into chunks

  • Half an aubergine, diced

  • Handful of green beans, ends chopped and cut in half

  • 1 tin of chickpeas, drained and washed

  • Handful of olives (optional)

  • Feta - for sprinkling on top

  • Couscous or flatbreads to serve


VEGETARIAN & VEGAN OPTIONS

  • 1 Sweet potato, diced in to medium chunks

  • Violife Vegan feta cheese alternative - for sprinkling on top


HOW TO COOK

  1. Preheat your oven to 200 degrees.

  2. In a large non-stick deep baking tray, layer all your vegetables and add 1 tablespoon of our Harissa & Rose Seasoning.

  3. Next, add your chicken thighs (or sweet potato chucks) on top of the vegetables, add 1 tablespoon of olive oil and an additional tablespoon of the Harissa & Rose seasoning.

  4. Pop the tray in the oven to cook for 15 minutes.

  5. After 15 minutes, add the drained (and washed) chickpeas to the tray and give everything a good stir.

  6. Pop your traybake back in to the oven for a further 10 minutes or until your chicken is cooked through, or your sweet potato is soft to cut. And serve.


TIPS FOR SERVING

Serve in a bowl over couscous, rice or a flatbread. Sprinle with the feta / Vegan feta alternative.
