Fajitas are a delightful Mexican dish that has gained immense popularity worldwide! Originating from the ranch lands of West Texas, fajitas have a rich history that dates back to the early 1930s. Traditionally made with skirt steak, fajitas were a humble meal enjoyed by Mexican cowboys known as vaqueros. Over the years, this simple yet flavorful dish has evolved into a beloved culinary sensation that transcends borders and cultures. The key to a perfect fajita lies in our Mexican Fiesta seasoning.

COOKING TIME: 20 minutes (frying pan method), 15 minutes (air fryer method)

 

Mexican Chicken Fajitas Recipe


You will need...


Ingredients

  • 2 tablespoons Great Northern Spice Mexican Fiesta Seasoning

  • 2 large boneless and skinless chicken breasts, cut into strips

  • 1 tablespoon rapeseed oil (or olive oil)

  • 1 teaspoon minced garlic or garlic paste

  • 1 red onion, sliced into wedges

  • 1 red bell pepper, sliced into 1/2 inch slices

  • 1 yellow bell pepper, sliced into 1/2 inch slices

  • 1 green bell pepper, sliced into 1/2 inch slices

  • 4 tortilla wraps

  • Salsa (optional)

  • Sour cream (optional)

  • Grated cheese (optional)


Healthy options

  • 1 avocado, pit removed then sliced

  • Use seeded wraps, BFree Sweet Potato wraps (also gluten free) or Deli Kitchen Carb Lite wraps (30% less carbs)


How to cook - frying pan option

  1. Heat the oil in a large pan on a medium-high heat.

  2. In a large bowl, add your chicken, and sprinkle over with 2 tablespoons of our Mexican Seasoning. Mix well until the chicken is coated.

  3. Add the chicken and garlic to the pan, and fry for about 10 minutes, stirring each minute.

  4. Add the sliced peppers and onion and continue frying for a further 5 minutes. If you want these ingredients softer, give them up to 10 minutes.

  5. Warm your tortillas up for 30 seconds in the microwave.

  6. You are now ready to add your fajita ingredients on to the tortillas. Serve with salsa, sliced avocado, sour cream and grated cheese. Enjoy!

How to cook - air fryer option

  1. In a large bowl, add your chicken and garlic, then sprinkle over with 1 and a half tablespoons of our Mexican Seasoning and drizzle over some rapeseed oil. Mix well until the chicken is coated.

  2. Add the sliced peppers and onion to the bowl, gently mix in, then transfer your seasoned fajita ingredients to the air fryer. Set for 15 minutes at 200℃ and stir halfway through.

  3. Warm your tortillas up for 30 seconds in the microwave.

  4. You are now ready to add your fajita ingredients on to the tortillas. Serve with salsa, sliced avocado, sour cream and grated cheese. Enjoy!
