MEXICAN FAJITAS

Originating from West Texas, fajitas have a rich history dating back to the 1930s. Traditionally, fajitas were a humble meal enjoyed by Mexican cowboys known as vaqueros. The key to a perfect fajitas lies in our Mexican Fiesta seasoning.
This Mexican Fajitas recipe uses the Great Northern Spice Mexican Fiesta Rub & Seasoning.
INGREDIENTS
2 tablespoons Great Northern Spice Mexican Fiesta Seasoning
2 large boneless and skinless chicken breasts, cut into strips
1 tablespoon olive oil
1 teaspoon minced garlic or garlic paste
1 red onion, sliced into wedges
1 red bell pepper, sliced into 1/2 inch slices
1 yellow bell pepper, sliced into 1/2 inch slices
1 green bell pepper, sliced into 1/2 inch slices
4 large soft tortilla wraps
Salsa (optional)
Sour cream (optional)
Grated cheese (optional)

300g oyster mushrooms
Plant-based sour cream, or Oat Fraiche
HOW TO COOK - FRYING PAN
In a large bowl, add your chicken or mushrooms, and sprinkle over 2 tablespoons of our Mexican Fiesta Seasoning. Mix well until the chicken or mushrooms are coated all over.
Add the chicken or mushrooms and garlic to the pan, and fry for about 10 minutes, stirring each minute.
Add the sliced peppers and onion. Continue frying for a further 5 minutes. If you want these ingredients softer, give them up to 10 minutes.
Next, warm your tortillas up for 30 seconds in the microwave.
You are now ready to add your fajita ingredients on to the tortillas, or serve in a bowl on the side for everyone to help themselves.
Serve with salsa, sour cream, grated cheese and your homemade guacamole. Enjoy!
HOW TO COOK - AIRFRYER
In a large bowl, add your chicken or mushrooms, and sprinkle over 2 tablespoons of our Mexican Fiesta Seasoning. Mix well until the chicken or mushrooms are coated all over.
Add the sliced peppers and onion to the bowl, gently mix in, then transfer your seasoned fajita ingredients to the air fryer. Set for 15 minutes at 200℃ and stir halfway through.
Next, warm your tortillas up for 30 seconds in the microwave.
You are now ready to add your fajita ingredients on to the tortillas, or serve in a bowl on the side for everyone to help themselves.
Serve with salsa, sour cream, grated cheese and your homemade guacamole. Enjoy!
